Blistered Tomato & Goat Cheese Crostini
8-10oz soft goat cheese
4oz cream cheese
3 tbs olive oil & 1/4 cup olive oil
2-3 garlic cloves minced
Pinch of sea salt and pepper
10oz package of cherry tomatoes
1 French baguette or bread of choice
1/3 cup finely chopped basil
Whipped goat cheese:
Add 8-10oz goat cheese, 4oz cream cheese, 3 tbs olive oil, 2-3 minced garlic closes, pinch of sea salt to food processor and pulse until smooth
Blistered cherry tomatoes:
Preheat to 425, Add 1x 10-12oz package of cherry tomatoes to bowl with 1/4 cup olive oil, 2 garlic cloves minced, salt and pepper, mix all together until evenly covered then pour tomatoes from the bowl onto baking sheet, bake for 25 min until a few have burst or browned
Crostini:
Preheat oven to 350, slice baguette and add slices on baking sheet, drizzle with olive oil. bake for 7-10 minutes on 350 until slightly brown or 425 for 5 min if putting in at same time as tomatoes
Spread goat cheese on each slice, add about 2-4 tomatoes to each slice depending on the size, lightly drizzle balsamic glaze or reduction over the top, garnish with finely chopped basil
